Sea Life and Swim

Kenzie has a new obsession with mermaids (and all things in the ocean/sea). She wants a mermaid tail, to swim with mermaids, and to have fish friends. We watch a lot, and I mean A LOT, of mermaid/fish related movies because they're her absolute favorite!

I mentioned in a previous post that she's started swim class, and she's doing amazing. She still needs practice, but she can officially swim on her own. We are fortunate to have a pool available to us all day, every day, so she gets to practice.

We recently took her to the Sea Life Aquarium at Arizona Mills Mall, she LOVED it! She was a little afraid of the touch tanks and bubbles (areas where you stand and makes you feel like you're in the water), but she eventually overcame that and was all into it! She even went a few days later with cousins! We had a blast telling her about different creatures and seeing her face light up when she saw the seahorses and sharks!

As for John and I, we're great. Work is... well, it's work. It's very blah blah blah, but we're doing well with it! Nothing new to report.

Hello! Here's a quick update :)

OK, I really don't have a big excuse, just that we've been busy and I sort of forgot about updating the blog. Kenzie was enrolled in swim classes, she goes every Saturday (not sure if that's been mentioned, but whatever). She loves it and is already swimming without help! We're always *ALWAYS* around, but she can swim by herself, and it only took a couple classes. Her goal is to be a mermaid (her words, not mine).

John and I are busy. If we're not busy, we've been sick. Not fun, I know. This post is pretty boring, sorry friends and family!

{healthy} Rice Krispy Treats

Yes, you heard me, HEALTHY (and vegan!)! No marshmallow, no butter. Just delicious, simple ingredients.

Baking just got a whole lot more interesting to me :) I keep finding ways to make my favorite treats healthier and better!

Recipe

8 Cups brown rice cereal (I used chocolate brown rice cereal)
1/4 cup ground flax seed
2/3 cup natural peanut butter (or whatever nut butter you want)
1/2 cup agave nectar or honey
1/2 teaspoon vanilla

Directions

Lightly oil 13x9 pan with coconut oil.

Combine cereal and flax in large bowl, set aside. In medium sauce pan, heat remaining ingredients, stirring constantly, until liquefied (about 5 minutes). Poor over cereal/flax mix and combine until well coated. Dump into oiled pan and smooth out evenly.

Refrigerate for one hour before cutting into squares.

Makes 30.

San Diego, 2014

We just got back from our annual trip to San Diego, staying (practically on) Ocean Beach this round. Our hotel was comfortable and conveniently located! Everything was just 5-10 minutes away, 10 minutes being the very most (if even).

Ocean beach is beautiful, quiet, and they offer a dog beach, so we took Max! We didn't really do much, but we like being able to just wake up and go, relax, and not stress over time. Which is exactly what we did and we already miss it. We couldn't have asked for better weather!
